We have enjoyed working with the Braehead Cook School in introducing people to the delights of eating and cooking with rare and native breed meats. At these events Arlene has been talking about the benefits of the breeds used, how traditional less intensive methods of rearing animals give a less stressed meat, and give the animal time to mature in flavour and texture, while the resident chef Jason McNelly demonstrates the delights which can be create from our produce.
